Hot Garlic Noodles

Ingredients
  • Noodles, 300 grams
  • Julienned Carrots, 2 big
  • Julienned Beans, 100 grams
  • Julienned Capsicum, 2
  • Shredded Cabbage, 1 small
  • Leeks, ½ a stick
  • Chopped spring onions, ½ cup
  • Red chillies, 15
  • Garlic, 5 (big)
  • Ajinomoto, 1 tsp
  • Soya sauce, 2 tsp
  • Oil, 5 tbsp
Instructions
  1. Bring plenty of salted water to boil in a large vessel.
  2. Add the noodles and a tsp of oil to this.
  3. Cook till the noodles are done.
  4. Drain the water and keep the noodles aside.
  5. Grind garlic and red chillies coarsely.
  6. Heat oil in a large pan.
  7. Add the garlic red chilli paste and fry it till the raw smell disappears.
  8. Now add leeks, spring onions, carrots & beans.
  9. Saute the vegetables and cook it till the carrots and beans are about half done.
  10. Now add the cabbage, capsicum, ajinomoto and soya sauce.
  11. Cook the vegetables till it is almost done (about ¾th done so that the vegetables are cooked yet crunchy).
  12. Turn off the heat.
  13. Mix the noodles well with the vegetables.
  14. Once mixed well turn the heat on and cook the noodles on slow heat so that the sauces mix well with the noodles.
  15. Serve hot!!
Notes
I did not make too spicy, if you like you may up the number of red chillies to suit your tastes.
