Stuffed Mushrooms

- Button Mushrooms, 200 grams (10-12 mushrooms)
- Finely chopped onions,1 medium sized
- Finely chopped garlic, 1-2 tsps
- Finely chopped Capsicum, ½ medium sized
- Dried Basil leaves, ½ tsp
- Oregano, ½ tsp
- Pepper, 1 tsp
- Mozzarella cheese for the topping
- Salt to taste
- Oil, 1 tbspn
- For the filling:
- Clean the mushrooms well.
- Remove the stem from the mushrooms and chop them finely.
- Heat oil in a pan and add the onions & garlic and saute them till the onions are light pink in colour.
- Now add the chopped mushroom stems and cook till the water from the mushrooms evaporate.
- Add the herbs, pepper, salt and mix well.
- At this stage add the capsicum and saute for a minute.
- For the stuffed mushrooms:
- Preheat your baking oven at 180C.
- Grease a baking tray and keep aside.
- Fill the mushrooms caps with a generous portion of the stuffing.
- Top it with mozzarella cheese and place it in the oven.
- Bake for 15-20 mins or till the mushrooms are done.
- Serve hot!
