Ingredients
  • Onions, 2 big grated or finely chopped
  • Tomatoes, 2 big grated or finely chopped
  • Ginger, 1 small piece grated
  • Garlic, 1 tsp grated
  • Boiled eggs, 2
  • Oil, 2-3 tbspns
  • Water, ½ cup
  • Coconut milk, ½ cup
  • Salt to taste
  • Dry powders:
  • Chilli powder, 1 tsp (adjust according to taste)
  • Turmeric powder, ½ tsp
  • Coriander powder, 2 tsps
  • Garam masala, ½ tsp
Instructions
  1. Heat oil in a pan and add ginger and garlic . If you like the flavour of burnt garlic, fry it till it is light brown.
  2. Now add the onions and fry till brown.
  3. To this add the tomatoes, dry powders and salt. Fry till the tomatoes blends well in the mixture and oozes oil from the sides.
  4. Add water to this and once the mixture starts boiling add the coconut milk. Boil for about 30 seconds.
  5. Cut the boiled eggs in half and cook it in the curry for a minute or so till the mixture is soaked in the eggs.
  6. Serve Hot!
