Mutter Paneer (Peas and Cottage cheese in vegetable sauce)

- Onions, 1 big finely chopped
- Tomatoes, 2 big pureed
- Carrots, 1 big
- Cottage cheese Paneer, 10-15 small cubes
- Peas,1/2 cup
- Garlic, 2 cloves
- Ginger, ½ inch piece
- Cardamom, 2
- Cloves, 2
- Cinnamon, a small piece
- Cashewnuts, 6 pieces
- Poppy seeds/Khus Khus, 1 tsp
- Cream, 1-2 tbspn(s)
- Kasuri Methi/Dried fenugreek leaves, a big pinch
- Coriander, 3-4 stalks
- Oil, 2 tbspns
- Salt to taste
- Dry Powders:
- Chilli powder, ½ (heaped) tsp
- Turmeric powder, ¼ tsp
- Garam Masala, 1 tsp
- Soak cashew nuts and poppy seeds in very little warm water for 5-10 minutes.
- Make a fine puree of the carrot, ginger, garlic, cardamom, cloves, cinnamon, cashew nuts and poppy seeds.
- Heat oil in a pan.
- Fry the onions till it has evenly browned.
- Add this to the onion mixture and saute well for 2-3 minutes.
- Now add the pureed tomatoes, the dry powders and salt.
- Cook it till the oil separates out.
- Now add the boiled peas, cottage cheese and one cup of water and boil well.
- Serve hot with chappathis/rotis!
