Mutter Paneer (Peas and Cottage cheese in vegetable sauce)

Ingredients
  • Onions, 1 big finely chopped
  • Tomatoes, 2 big pureed
  • Carrots, 1 big
  • Cottage cheese Paneer, 10-15 small cubes
  • Peas,1/2 cup
  • Garlic, 2 cloves
  • Ginger, ½ inch piece
  • Cardamom, 2
  • Cloves, 2
  • Cinnamon, a small piece
  • Cashewnuts, 6 pieces
  • Poppy seeds/Khus Khus, 1 tsp
  • Cream, 1-2 tbspn(s)
  • Kasuri Methi/Dried fenugreek leaves, a big pinch
  • Coriander, 3-4 stalks
  • Oil, 2 tbspns
  • Salt to taste
  • Dry Powders:
  • Chilli powder, ½ (heaped) tsp
  • Turmeric powder, ¼ tsp
  • Garam Masala, 1 tsp
Instructions
  1. Soak cashew nuts and poppy seeds in very little warm water for 5-10 minutes.
  2. Make a fine puree of the carrot, ginger, garlic, cardamom, cloves, cinnamon, cashew nuts and poppy seeds.
  3. Heat oil in a pan.
  4. Fry the onions till it has evenly browned.
  5. Add this to the onion mixture and saute well for 2-3 minutes.
  6. Now add the pureed tomatoes, the dry powders and salt.
  7. Cook it till the oil separates out.
  8. Now add the boiled peas, cottage cheese and one cup of water and boil well.
  9. Serve hot with chappathis/rotis!
