CHOCOLATE TARTS

A couple of days back when i made lemon curd tarts, i made a few extra tart shells so that i could make chocolate filled tarts for my son. Well.. my son was not the only one who liked it. All of us at home devoured the decadent chocolate ganache tarts. I have made a mental note to walk a few extra rounds to work off the extra calories. But trust me…these tarts are worth the effort.

Ingredients
To make the Chocolate Ganache
  • Cooking Chocolate, 180 gms (broken into small pieces)
  • Cream, ½ cup
  • Butter, 4 tsps
To make the Tarts
  • Flour, 250 gms
  • Cold Butter, 120 gms
  • Castor Sugar, 60 gms
  • Egg,1
  • Vanilla essence, ½ tsp
  • Cold Water, 2 tbspns approx.
  • Pinch of salt
Instructions
To make the Chocolate Ganache
  1. Pour the cream in a container and place it on medium flame.
  2. Once it starts boiling take it off the flame and add the cooking chocolate.
  3. Whisk it till the chocolate melts. (Alternately you can double boil it).
  4. Now add the butter and mix well.
  5. Your chocolate ganache filling is ready.
To make the Tarts
  1. Preheat the oven at 180C.
  2. Grease the tart moulds.
  3. Add the cold butter and flour in a container. Rub the cold butter into the flour till the whole mixture becomes crumbly.
  4. Add the remaining ingredients and knead well on a lightly floured work surface.
  5. Cover the dough with a plastic wrap and refrigerate for 30 minutes.
  6. Roll out the tarts on a lightly floured work surface into a ⅛ inch thick sheet.
  7. Place the tart moulds on top of the rolled out dough. Press the mould on the dough and cut out small pastries.
  8. Line the tart moulds with these pastries.
  9. Prick the pastries with a fork so that it doesn’t rise during baking.
  10. Bake for 10-12 mins.
  11. Remove the tarts from the moulds and let it cool.
  12. Pour the chocolate filling into the tarts and refrigerate till set. Serve!
