LEMON CURD TARTS

I am sure that many of us have a palette for tangy flavours, atleast i do ..I love lemon curd tarts.  The tangy taste of the lemon curd against the crumbly tarts is to die for.

A tart is typically a baked short crust pastry which is filled with sweet or savoury mixtures. It is a good dessert for parties. It can be made a day or two before the party and assembled just before serving.

Lemon curd tarts

Lemon curd is a dessert topping made using egg yolks, sugar, corn flour, butter and most importantly lemon juice and rind. It has a tangy taste and creamy texture. The lemon curd is very easy to make and can be stored in the refrigerator for a week or so.

Serves: 15-20 small tarts
Ingredients
To make the lemon curd
  • Eggs, 2
  • Fresh lemon juice, 40 ml
  • Grated lemon rind, 1 tsp
  • Cornflour, 1 tsp
  • Butter, 3 tsp
  • Castor Sugar, 100 gms
To make the tarts
  • Plain flour, 250 gms
  • Cold Butter, 120 gms
  • Castor Sugar, 60 gms
  • Egg,1
  • Vanilla essence, ½ tsp
  • Cold Water, 1.5-2 tbspns
  • Pinch of salt
Instructions
To make the lemon curd:
  1. Place a container on a double boiler.
  2. Add the eggs, sugar, cornflour, lemon juice and rind to that.
  3. Whisk it continuously till the mixture till becomes thick and light yellow in colour.
  4. Remove from heat and add the butter and mix well.
  5. Once cooled you can refrigerate it and use it on your tarts as and when needed.
To make the tarts
  1. Preheat the oven at 180C.
  2. Grease the tart moulds.
  3. Add the cold butter and flour in a container. Rub the cold butter into the flour till the whole mixture becomes crumbly.
  4. Add the remaining ingredients and knead well on a lightly floured work surface.
  5. Cover the dough with a plastic wrap and refrigerate for 30 minutes.
  6. Roll out the tarts on a lightly floured work surface into a ⅛ inch thick sheet.
  7. Place the tart moulds on top of the rolled out dough and press the mould on the dough and cut out small pastries.
  8. Line the tart moulds with this.
  9. Prick the pastries with a fork so that it doesnt rise during baking.
  10. Bake for 10-12 mins.
  11. Remove the tarts from the moulds and let it cool.
  12. Once it has cooled down, fill the tarts with the lemon curd and serve!
