ALOO MUTTER

This morning i was deliberating over what dry vegetable to make for lunch. Potatoes were the first and the most obvious choice. I am sure there are very few who don’t love the vegetable. Dry dishes made using Potato-Peas and Potato-Cauliflower combinations are to die for. I finally zeroed in on Aloo mutter and i shall share my version of the recipe today.
[I have used an aluminium pressure cooker to make this dish. Those of you who do not have a pressure cooker can make in using a covered pan.]

Ingredients
  • Onions,1 small
  • Potatoes, 2 medium sized
  • Peas, ⅓ cup
  • Chopped Garlic, ¾ tsp
  • Cumin seeds, 1 tsp
  • Chopped coriander
  • Salt to Taste
  • Dry Powders:
  • Coriander powder, ¾ tsp
  • Chilli powder, ½ tsp
  • Turmeric powder, ¼ tsp
  • Garam masala, ½ tsp
Instructions
  1. Pour about 2 tbpsns of oil in a pressure cooker.
  2. Once heated add cumin seeds and after it has popped add chopped garlic and onions.
  3. When the onions are slightly brown add the dry powders (coriander powder, chilli powder, turmeric powder and garam masala).
  4. Stir for a bit and then add the potatoes and peas.
  5. To this add about ¼ cup water and salt to taste.
  6. Pressure cook it for about 10 minutes (I turned off the cooker after 2 whistles).
  7. Garnish with coriander leaves and serve hot!
  8. Variation: Green chillies can be used in lieu of chilli powder. In case you are using green chillies, grind one large chilli along with 2-3 pods of garlic and fry it along with the onions.
